One of the main reasons for mushroom poisoning is that many people do not know the species composition of mushrooms. This leads to poisoning of varying severity - from acute forms to death. Remember that when picking mushrooms, especially early ones, you need to be extremely careful. The most famous of the early mushrooms are strings and morels. According to recent studies, even spring lines are in fact not conditionally poisonous, but poisonous mushrooms. Morels can be eaten only after pre-treatment, and the cooking technology must be carefully followed. For example, these mushrooms must be boiled at least three times, and after that they should be rinsed generously with water and squeezed thoroughly. Strings and morels contain substances that can cause serious poisoning. They contain gelvelic acid, a dangerous poison, and the stitches also contain gyromitrin, which is not destroyed during cooking.
How to avoid poisoning? The Polotsk Zonal Center for Hygiene and Epidemiology advises following the following rules of prevention:
- collect only known mushrooms (there are special atlases of edible and poisonous mushrooms);
- collect and do not buy at the market overgrown, flabby, damaged by larvae and mold mushrooms;
- do not taste suspicious mushrooms
- do not pick mushrooms along the roads;
- pay attention to the shape, external color, color of the flesh before and after cutting the mushroom (this will help you recognize poisonous mushrooms that are similar in appearance to edible ones);
- there is no need to delay processing mushrooms, since this product is perishable;
- harvest only young mushrooms for future use;
- salt, dry, marinate each type of mushroom separately;
- before boiling, thoroughly wash the mushrooms to remove particles of sand and soil;
- be sure to drain the water after boiling;
- never buy canned mushrooms on the market that are hermetically sealed with lids at home, as well as dried mushrooms, mushroom caviar and various salads with mushrooms.
The main signs indicating poisoning:
• nausea, vomiting
• abdominal pain
• diarrhea
• increased body temperature
• tachycardia (rapid heartbeat)
• low blood pressure
• fainting
• muscle cramps.
Important!
All types of mushroom poisoning require immediate assistance.
Even if you feel slightly unwell after eating mushrooms, you should immediately seek medical help. Before the doctor arrives, the victim should empty his stomach, be sure to put him to bed, and apply heating pads to his legs and stomach. Cold salted water (1 teaspoon per glass of water) will somewhat ease nausea and vomiting. You can also drink strong tea, black coffee or milk. It is strictly forbidden to drink alcoholic beverages, since alcohol promotes the rapid absorption of mushroom poisons. The remains of the mushrooms that led to poisoning must be transferred to a medical professional for examination, this will simplify the choice of therapy.
