In the summer, the temperature of air and water in open water bodies increases, which creates optimal conditions for the reproduction and accumulation of most pathogens of intestinal infections, and as a result, the likelihood of food poisoning and acute intestinal infections (AEI) increases.
The risk of food poisoning and acute intestinal infections increases if food preparation rules are not followed, or if the temperature regime is violated when storing food, especially perishable ones (milk, cottage cheese, meat). Foods prepared without heat treatment and consumed cold pose a certain danger.
To protect yourself and your children from the disease you need to:
observe the rules of personal hygiene, wash your hands thoroughly with soap after returning home from the street, before eating and after visiting the toilet;
Before consumption, thoroughly wash vegetables, fruits, and berries, and for young children, use boiled or bottled water;
store food in places protected from insects, rodents, and pets;
use clean packaging (polyethylene, paper, food containers, etc.) when transporting and storing food products; for perishable food products - a cooler bag or refrigerants;
Do not purchase food products from random persons or places of unauthorized trade.
Particular attention should be paid to perishable products - semi-finished meat products, salads, cottage cheese, milk, confectionery (cakes), etc. When purchasing such products, you need to look at the expiration date and storage conditions. If the product's shelf life has expired or there is the slightest suspicion that the refrigeration equipment is not working efficiently, the product should not be purchased.
Perishable food products must be purchased only in retail outlets equipped with refrigeration equipment. You should not buy frozen foods (this also applies to ice cream) in deformed packaging with sticky contents. Most likely, they were defrosted.
In the heat, it is dangerous to buy baked goods with meat, vegetable and cheese filling, pasties, khachapuri, belyashi, buns with cream, cakes, etc., if refrigeration equipment is not used for storing them. When preparing food at home, you must follow a number of rules: wash your hands thoroughly before starting food preparation and after contact with raw products, use separate cutting boards and knives for “raw” and “ready”, thoroughly rinse (with boiling water) greens, vegetables and fruits, do not cook minced meat in advance (more than a day), in the refrigerator try not to place ready-made dishes and raw meat and fish on the same shelf.
When storing food at home, it is also necessary to observe the temperature regime established for it. Prepared dishes intended for temporary storage must be cooled as quickly as possible and stored in the refrigerator.
It is important to remember that the packaging of dairy and fermented milk products, juices, industrial salads, etc. indicates an expiration date calculated subject to the integrity of the packaging and storage conditions. If the packaging is opened or tampered with, the shelf life of such products is usually significantly reduced.
Be careful with early vegetables and melons; producers often use chemical fertilizers to speed up ripening. Do not give these fruits and vegetables to children. When purchasing food products, be sure to check with the seller for documents certifying their quality and safety.
If there are small children in the family, pay increased attention to keeping the house clean and follow the rules of personal hygiene. Wash your hands with soap and water before preparing food or feeding children. Wash children's dishes regularly using detergents, then rinse thoroughly and rinse with boiling water before use. When feeding infants, use only freshly prepared baby formula.
Do not give children or consume unboiled bottled milk or raw eggs; use bottled water or boiled water for drinking; use fresh, unspoiled food for cooking. From an early age, instill in children hygiene skills - washing hands after using the toilet and before eating, washing, brushing teeth, keeping the house tidy.
While on vacation, do not use water from random sources for drinking and household purposes, swim only in reservoirs permitted for organized recreation, when swimming, try not to swallow water, explain this to children.
When visiting foreign countries, limit the consumption of foods that are not typical for your diet.
In addition, if you feel unwell (stomach pain, nausea, vomiting, diarrhea), do not prepare food for family and guests, consult a doctor immediately.
